Usually factory jetting is on the rich side so you'll always be safe from a lean burn down. If you're too rich, you'll just smoke and foul plugs. You won't burn down. Taking that into consideration, if you're over 20 degrees with the factory jetting, you will be getting too rich, but you won't damage your engine (except for fouling plugs.) When it gets colder, you will run leaner, and that's where engine damage can occur. I wouldn't worry about running the sled when it's 5 degrees colder than the factory jetting is set for, but that's just me. Some people run their sleds rich with the rationale that it's better to be safe than sorry.
Do a search on the site about reading spark plugs and piston wash. If your plugs are black, you can safely go to smaller main jets. If your plugs are cardboard brown, you are perfect.
